You are attempting to explain what everyone knew already because it's obvious. There is nothing to realise. We already knew when we came in that we aren't rats, and neither are birds. We have no trouble understanding a bird is not a rat. This isn't a revelation to anyone. It's just a funny surprise to see a bird instead of a rat like we were expecting. The bird specifically being a pigeon or seagull would not have changed or taken away from that at all, because pigeons and seagulls also aren't rats just like rooks aren't. The additional joke would have only made things a small bit funnier once you realised the implications. It is a SMALL missed opportunity and that is all.
