To my understanding there should only be the main ambitions as a sub-category, but there are also some heart's desire stories listed. I couldnt figure out why, but perhaps I'm totally wrong anyway.
So, if you complete an ambition can you start a new one? I started light fingers when i first started the game but now i wish i had gone for heart's desire. The one upside being the free letherean tea leaves, however if I can finish light fingers then start HD I might do that rather than wasting the leaves.

None of the Ambitions are done. There's no end to any of them, and no official word if any is planned for the foreseeable future. (In October 2014 FBG have anounced a round of content updates for the Ambitions, but even now - 2.5 years laters - Light Fingers have not yet received that update). Think of the Ambitions as background stories which help define your character, which you advance from time to time as opportunities allow.
